Peanut Butter, Chocolate Chip, Oatmeal Cookie for One (Healthy!)

We had a wonderful weekend hanging out with my family, and our friends Mel and Dave in York this weekend!  We went to to Central Market (one of my favorite places in York!), got a beer sampler at Mudhook Brewery, enjoyed my moms cooking, and of course just spent good old quality time with everyone!  My favorite kind of weekend!

Anyway,  I feel like I’ve been really busy recently so haven’t been spending as much time in my kitchen as I normally do.  I did however, make this Peanut Butter, Chocolate Chip, Oatmeal Cookie for One on a night when John was out of town.  I always find it a sort of fun challenge just making food for myself when he is gone.  I came up with this and it was quite good.  And relatively healthy at that!

Peanut Butter, Chocolate Chip, Oatmeal Cookie for One

1 tbsp natural peanut butter
1 tsp maple syrup
1 egg white
1 tbsp natural apple sauce (or mashed banana)
splash of milk
1/4 c oats
1/4 tsp baking powder
pinch baking soda
dash of salt
1 tbsp chocolate chips

Melt Peanut butter in the microwave.  Stir in maple syrup, egg white, apple sauce, and milk.

Stir in oats, baking powder, baking soda, and salt.  Then add chocolate chips.  Pour into a oven safe bowl.

Bake at 350 for 20-30 minutes, until it starts to brown on the top and pull away from the bowl a little.

I added a scoop of vanilla ice cream that I whipped up in my ice cream maker using almond milk, sugar, and vanilla.  But you can use regular ice cream, frozen yogurt or just eat it plain.
