I took the Black Bean Brownie Recipe, made a few changes to it, and came up with these. I have to admit I was pretty hesitant at first… But these are so so so scrumptious and you would never even know they weren’t made with flour and a lot of butter like normal chocolate chip cookies. Seriously. I had to make these suckers twice in 3 days because we just keep eating them. I can’t wait to get home from work everyday just so I can have one. They’re good cold of course, but exceptional when they are warmed up (like any Chocolate chip cookie, always better when warm) I normally pop one in the microwave for about 15 seconds. They’re also delicious with vanilla ice cream on top. An indulgence I have consumed the past two nights.1/2 c applesauce
3/4 c oats
1/4 c water
1 tbsp coconut oil (See below)
1 egg
1/2 c brown sugar
1 tbsp honey (optional)
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract
3/4 c choco chip
Combine all ingredients except chocolate chips in your food processor (or blender) until smooth.
Add chocolate chips and pulse a couple times until mixed in.
Spoon batter into a greased muffin pan or 8×8 pan.
Bake for 20-25 minutes.
Store these treats in the refrigerator.
Think about all of the natural fiber you are getting! In something so good?? Believe it!
You can probably omit the coconut oil too if you want to make them even lower in fat, but I haven’t tried that so I can’t say for sure. I have been reading about the healthy benefits of coconut oil a lot recently though and found this article (among many) that talks about some of them: Benefits of Coconut Oil

i made these for home fellowship, baking them in an 8 x 8 pan. Everyone thought they were delicious – so moist and chocolatey! I did tell them that they were healthy and contained no wheat flour. That just made people feel they could eat seconds. They are good. I am tempted to finish the rest of them today, but I will try to restrain myself!
